Title: Mama's Quick Calas

Yield: 18 Servings

2cCooked rice
3 Eggs, beaten
1/4tsVanilla
1/2tsNutmeg
1/2cSugar
1/2tsSalt
6tbFlour
3tsBaking powder
  Confectioners' sugar

Combine rice, eggs, vanilla and nutmeg, mix well. Sift dry ingredients together and stir into rice mixture. When thoroughly mixed drop by spoonfuls into hot deep fat (350F) and fry until brown. Drain on absorbent paper, sprinkle with confectioners' sugar and serve very hot.
